Gluten Free Baking Class - Banana Bread
3 medium bananas mashed
1 cup sugar (or ½ cup raw sugar and 1/3 cup honey)
2 eggs
½ cup of softened butter (1 cube)
Sour milk (Combine 1/2 tsp. lemon juice with milk in 1 tablespoon.)
1 tsp. vanilla
1 ¾ cup of Eleanor’s Cake Flour
½ tsp. baking soda
3/4 tsp. salt
Combine flour, baking soda and salt in a small bowl. Mash the bananas in a small bowl. Cream sugar, butter, and eggs in a large bowl. Add the mashed bananas, lemon juice and milk combination, and the dry ingredients. Grease the bread pan and pour the banana bread batter in the pan. Bake at 400 degrees for approximately 55 min. Let cool for about 10 min. and take out to finish cooling. Enjoy
